A more useful question is how much the target consumer actually needs, and how that number is calculated in the first place.

First, Settle the Basis of Calculation

The same claim of 80% protein can correspond to very different charge rates depending on the basis used. Domestic nutrition labelling in China typically declares protein per 100 g and per serving, while formulation work on the production side tends to use dry basis.

The assay method matters even more. Kjeldahl measures total nitrogen and converts it to protein using a factor, which means any nitrogen-containing non-protein material - adulterants of the kind seen in the melamine affair, but also legitimate amino acid and nucleotide ingredients - is counted as protein. A disciplined manufacturer requires amino acid profiles from suppliers or cross-checks with a more specific method rather than relying on Kjeldahl alone. Higher Is Not Always Better

Reaching protein levels above 90% is technically achievable but frequently self-defeating. High-purity whey protein isolate or hydrolysate costs considerably more and the taste deteriorates measurably: bitter peptides increase, solubility drops, and reconstituted shakes show more foam and sediment. For everyday supplementation and general fitness consumers, a 70% to 80% whey concentrate or dual-protein formula strikes a better balance across cost, taste and absorption. Only professional athletes and specific special dietary applications justify pursuing higher purity.

The Logic Behind Dual Animal-Plant Protein

Dual protein - blending animal and plant sources - has become mainstream, and the reasoning runs along two lines. The first is amino acid complementarity: whey is rich in branched-chain amino acids and leucine and absorbs quickly, while soy or pea protein contributes more arginine and glutamine with a slower absorption profile, so the combination extends the amino acid release curve. The second is cost and positioning: plant proteins usually cost less and bring vegan-friendly, lower-allergen claims with them.

Typical blend ratios fall between 6:4 and 4:6. The practical caveat is that plant proteins bring stronger beany or earthy notes and weaker solubility than whey, which has to be compensated with a more assertive flavour system and finer powder processing.

Sweetener Systems and Mouthfeel

Taste drives repeat purchase in this category more than any other variable. On sweeteners, the conventional route combines sucrose with sucralose at low cost but meaningful calories. Sugar-free routes use erythritol with sucralose or steviol glycosides: calories drop away, but high erythritol loadings produce a noticeable cooling sensation and a mild laxative risk. Premium routes use monk fruit extract or allulose, which come closest to sucrose in taste profile but cost several times more.

Three further fundamentals matter. Thickening and mouthfeel come from xanthan gum, guar gum or carboxymethyl cellulose. Emulsification and dispersion come from soy lecithin, where 0.5% to 1% noticeably improves instant solubility and reduces residue on the cup wall. Masking comes from flavour materials such as cocoa or peanut powder, which are effective at covering the astringent, fishy notes of protein. Chocolate and vanilla became classics precisely because they mask best.

Special Dietary Foods and Compliance

Products positioned as sports nutrition or foods for special dietary uses must meet the applicable national standards, such as GB 24154, the general standard for sports nutrition foods, which sets limits on contaminants and mycotoxins and defines permitted nutrient fortification substances and dosages. Where a special dietary claim is made, the label must also declare the target population and serving amount. Export programmes must satisfy the destination regulation, whether that is Regulation (EU) No 609/2013 or the US DSHEA framework.

Packaging and Shelf Life

The two dominant failure modes for protein powders are moisture-driven caking and lipid oxidation, the latter especially in formulas containing milk fat or MCT. Foil laminate pouches or high-barrier tubs with a desiccant and seal integrity testing are recommended. Shelf life typically runs 18 to 24 months, though formulas containing live cultures or digestive enzymes require stability testing to be repeated.
