Protein Powder OEM Raw Materials: Whey, Soy and Pea Compared, Plus Adulteration Checks

When brands compare protein powder quotations, the question we hear most is why two powders both declaring 80 percent protein can differ so much in price. The answer sits almost entirely in the raw material. Whether the protein is whey or plant-derived, concentrate or isolate, how complete its amino acid profile is, how it dissolves and tastes, and whether it has been adulterated: together these set both cost and consumer experience, and none of it shows up in the single protein line on the label. This guide covers material selection for protein powder OEM.

Protein Powder OEM Raw Materials: Whey, Soy and Pea Compared, Plus Adulteration Checks

1. Choosing between the three main sources

Whey has the highest utilisation among animal proteins, with a complete amino acid profile, high branched-chain amino acid content and good solubility, which suits sports nutrition and muscle maintenance in older adults. It comes as concentrate, typically 70 to 80 percent protein with some lactose and fat, or isolate at around 90 percent with very low lactose and fat. Isolate costs noticeably more but suits lactose-intolerant consumers.

Soy isolate sits at the balance point between cost and performance: around 90 percent protein, a relatively complete profile though slightly low in methionine, and clearly cheaper than whey, but it carries a beany note that needs masking. Pea protein has become the popular plant option - low allergenicity, non-GMO and free of the common allergens - but it is low in methionine and tryptophan, so it is usually blended with rice protein to complete the profile, and it eats chalky.

2. Key specifications: basis, amino acid scoring, solubility

The first thing to align is the basis of the content figure. Materials are usually quoted on a dry basis while the finished label is tested as-is, and differences in moisture, ash and carbohydrate account for several percentage points. State the basis in both the purchase contract and the finished-product test method, or disputes are near-certain.

Next is protein quality. The common measures are PDCAAS, the protein digestibility-corrected amino acid score, and DIAAS, the digestible indispensable amino acid score. Whey scores close to maximum, soy isolate follows, and pea alone ranks lowest, which is why plant powders are almost always blended. If a brand wants to talk about protein quality on pack or in marketing, the test basis and scoring method need confirming first.

Third is solubility, usually expressed as NSI or PDI. Solubility determines the mixing experience: low NSI material clumps, sticks to the shaker wall and tastes gritty. It is also strongly tied to processing history, since protein exposed to high heat or prolonged spray drying partially denatures and NSI falls. Measure it directly when qualifying a new supplier.

3. Adulteration and true protein testing

Adulteration generally takes two forms: cheap nitrogen sources added to inflate the measured protein value, and cheap proteins or non-protein fillers blended in. Kjeldahl measures total nitrogen and cannot distinguish protein nitrogen from non-protein nitrogen, so releasing material on Kjeldahl alone leaves an obvious gap.

In practice, supplement with additional methods on first lots from new suppliers and in annual audits: amino acid profiling to check the profile matches the declared source, true protein testing after precipitating the protein, and source-specific indicators such as whether lactose and ash fall in the expected range for whey. Material priced well below market almost always fails one of these three.

4. Flavour: the hardest part of a protein powder

Repeat purchase in protein powders is largely decided by flavour, and flavour is the most underestimated part of material selection. Whey is relatively mild in itself, though dairy note intensity varies by lot. Soy needs dedicated masking flavours and possibly a deodorisation step. Pea has the strongest earthy note and chalkiness, and depends heavily on the flavour system and on texturisers that add smoothness.

Flavour stability matters just as much. Proteins undergo Maillard reactions in storage, particularly in formulations containing sugar or lactose, producing colour darkening and flavour degradation. Low-sugar formulations, controlled water activity and high-barrier packaging are all necessary to hold flavour over shelf life. After sampling, run one accelerated cycle and compare the reconstituted taste against a three-month reference.

5. Acceptance and storage

The baseline list for protein materials covers sensory, protein content with the basis stated, moisture, ash, fat, lactose for whey, heavy metals, microbiology, NSI or PDI, and targeted adulteration screening. On storage, protein powders are hygroscopic and pick up odours, so keep them sealed below 25 degrees Celsius and 60 percent relative humidity, away from flavours and seasonings. Use opened material promptly and record lot numbers at issue so batches remain traceable.
